1. In a nice-sized mixing bowl, combine flour, sugar, baking powder, and salt.
2. In another mixing bowl, whisk together the Creme fraiche, Sour cream, Milk, Eggs, and Vanilla
3. Add the wet ingredients to the dry ones and mix until they are well combined.
4. On your skillet, heat and melt a few tablespoons of butter, and add a small ladle of batter at a time.
5. Cook until bubbles clearly form on the surface between 2-3 minutes.
6. Flip and cook for the same amount of time until the pancakes are crispy and lightly browned. Repeat this as many times as needed.
7. In a small pan, heat your maple syrup and honey until they are warm and transfer them to a small container for serving.
Optional: serve pancakes with fresh whipped cream, sliced bananas, and/or sliced strawberries.
8. Dust with cinnamon and fresh whipped cream.
