Love and Broccoli

“Love and Broccoli” is a comforting embrace in a bowl—tender pasta, rich stock, and the gentle bite of broccoli all laced with garlic, Parmigiana, and a spark of chile. It’s rustic yet refined, the kind of dish that feels both nourishing and a little bit romantic.

Serves 4
Ingredients
  • 1 medium head of broccoli (cut into small bite size pieces)
  • 1 white onion (chopped)
  • 4 cloves garlic (smashed)
  • 1 pinch of crushed red chile flakes
  • 1/4 cup extra virgin olive oil
  • 6 cups chicken stock
  • 1/2 cup Parmigiana cheese (Grated)
  • 1 pound rigatoni pasta (Cooked)
  • salt and pepper (to your taste)
  • 2 medium head of broccoli (cut into small bite size pieces)

  • 12 cups chicken stock
  • 1 cup Parmigiana cheese (Grated)
  • 2 pounds rigatoni pasta (Cooked)
  • salt and pepper (to your taste)

  • 1 1/4 cups extra virgin olive oil
  • 30 cups chicken stock
  • 2 1/2 cups Parmigiana cheese (Grated)
  • 5 pounds rigatoni pasta (Cooked)
  • salt and pepper (to your taste)
  • 10 medium head of broccoli (cut into small bite size pieces)
  • 10 white onion (chopped)
  • 40 cloves garlic (smashed)
  • 10 pinch of crushed red chile flakes
  • 2 1/2 cups extra virgin olive oil
  • 60 cups chicken stock
  • 5 cups Parmigiana cheese (Grated)
  • 10 pounds rigatoni pasta (Cooked)
  • salt and pepper (to your taste)
Directions
  1. Sauté your Onion, Garlic and Chile flake in your olive oil until translucent and starts to be some Golden.
  2. Add your chopped Broccoli and give it stir and cook about two minutes (better with a lid on)
  3. Add your Chicken stock and bring it to a boil then back down to a simmer only for about two minutes. (You don’t want your Broccoli to get mushy)
  4. Add your Cooked Pasta and Parmigiana cheese and let it sit for a few minutes before you serve.
  5. This is a presant style Italian pasta dish that is so cost effective and easy to achieve. It’s for sure a family favorite that even makes for great left overs.
  6. I suggest serving along side some roasted chicken or fish. But also can be the star of your dinner on its own.
  7. You can also add shrimp to the dish at the point when the Chicken stock comes to the boil. It’s fabulous with shrimp.
