Creamy smashed avocado is layered on golden toasted bread, then topped with perfectly poached eggs, crisp radish slices, and fresh dill.   • 2 slices crusty bread (sliced 1/2" thick)
  • 1 tablespoon olive oil
  • 1 tablespoon white vinegar
  • 2 large eggs
  • 1 avocado (pit removed, diced)
  • 1 lemon (zest and 1/2 juiced)
  • 1 radish (thinly sliced for garnish)
  • dill (for garnish)
  • kosher salt (to taste)

Directions
  1. Preheat the broiler. Arrange the bread slices on a sheet tray, drizzle with olive oil, and broil until golden. Remove from the oven and season with salt.
  2. Bring a high-sided pan of water to a simmer and add the vinegar. Swirl the water and gently drop in the eggs. Poach until desired doneness, about 2 minutes. Remove with a slotted spoon to a paper towel or lukewarm water to hold.
  3. In a bowl, add the diced avocado and mash with the lemon zest and juice. Season with salt to taste.
  4. Spread the smashed avocado evenly over the toasted bread. Top each slice with a poached egg and season with salt.
  5. Garnish with thinly sliced radish and fresh dill. Serve immediately.
