- 2 slices crusty bread (sliced 1/2" thick)
- 1 tablespoon olive oil
- 1 tablespoon white vinegar
- 2 large eggs
- 1 avocado (pit removed, diced)
- 1 lemon (zest and 1/2 juiced)
- 1 radish (thinly sliced for garnish)
- dill (for garnish)

Directions
- Preheat the broiler. Arrange the bread slices on a sheet tray, drizzle with olive oil, and broil until golden. Remove from the oven and season with salt.
- Bring a high-sided pan of water to a simmer and add the vinegar. Swirl the water and gently drop in the eggs. Poach until desired doneness, about 2 minutes. Remove with a slotted spoon to a paper towel or lukewarm water to hold.
- In a bowl, add the diced avocado and mash with the lemon zest and juice. Season with salt to taste.
- Spread the smashed avocado evenly over the toasted bread. Top each slice with a poached egg and season with salt.
- Garnish with thinly sliced radish and fresh dill. Serve immediately.
