- 1 medium head garlic
- 1 tablespoon extra-virgin olive oil
- 2 tablespoons chicken stock
Preheat oven to 400 degrees F. Cut off top of garlic head so that all cloves are exposed. Place garlic in a small baking dish. Drizzle with olive oil and chicken stock; cover tightly with aluminum foil, and roast in the oven until soft, about 45 minutes.
When cool enough to handle, squeeze out the pulp and smash with a fork; discard the garlic skins.
